About Mutton Biryani
Rich Hyderabadi-style mutton dum biryani — weekend special
Ingredients
- Mutton600g, bone-in
- Basmati Rice2.5 cups
- Yogurt1/2 cup
- Onion4 large, sliced
- Ghee4 tbsp
- Saffrona pinch in 3 tbsp milk
- Mint Leaves1/2 cup
- Biryani Masala2 tbsp
How to make it
- 1Marinate 600g mutton with yogurt, ginger-garlic paste, biryani masala, red chilli powder, turmeric, salt, and lemon juice for 1 hour.
- 2Soak 2.5 cups basmati rice for 30 minutes. Parboil with whole spices until 70% done. Drain.
- 3Heat ghee in a heavy pot. Fry sliced onions until deep golden. Remove half for garnish.
- 4Add marinated mutton. Cook on high heat for 10 minutes.
- 5Layer parboiled rice over mutton. Add saffron milk, fried onions, mint, coriander, and dots of ghee.
- 6Seal with dough or foil. Cook on high for 3 minutes, then lowest heat for 40 minutes (dum).
- 7Gently mix and serve with raita and mirchi ka salan.
