How to make it

  1. 1Marinate 600g mutton with yogurt, ginger-garlic paste, biryani masala, red chilli powder, turmeric, salt, and lemon juice for 1 hour.
  2. 2Soak 2.5 cups basmati rice for 30 minutes. Parboil with whole spices until 70% done. Drain.
  3. 3Heat ghee in a heavy pot. Fry sliced onions until deep golden. Remove half for garnish.
  4. 4Add marinated mutton. Cook on high heat for 10 minutes.
  5. 5Layer parboiled rice over mutton. Add saffron milk, fried onions, mint, coriander, and dots of ghee.
  6. 6Seal with dough or foil. Cook on high for 3 minutes, then lowest heat for 40 minutes (dum).
  7. 7Gently mix and serve with raita and mirchi ka salan.
