How to make it

  1. 1Mix 1 cup rajgira (amaranth) flour with salt, green chilli paste, and enough water to form a soft dough.
  2. 2Divide dough into 4 equal portions and roll into balls.
  3. 3Place each ball between two sheets of plastic wrap and press or roll into a flat disc (about 5 inches).
  4. 4Heat a tawa on medium heat. Cook each paratha with ghee on both sides until golden brown spots appear.
  5. 5Serve hot with curd or any Jain-friendly sabzi.
